TOP TIPS FOR HEALTHY EATING

Keep the carbohydrates you eat under 60g a day and switch your usual white bread and rice to a healthier brown variety.

Eat as much as you want of meat, fish and poultry.

Restrict sweet and starchy foods such as pastries, cakes and biscuits because of their 'hidden' fat content.

As far as portions go, listen to your body. Stop eating as soon as you start to feel full, even if this means leaving some on the plate.

STOUT AND WORCESTERSHIRE CUTLETS

SERVES 6

You will need...
• 18 Lamb Cutlets
• ½ Pint Stout
• 4 tbsps Worcester Sauce
• Pinch of Salt
• 1 Onion, peeled and finely sliced

Instructions...
Put cutlets into a large glass bowl and add the stout, worcester sauce, salt and onion. Cover and leave to marinate for about 3 hours.
When ready to cook, heat the grill. Drain the cutlets from the marinade and cook under the grill for 2-3 minutes each side.
If you prefer, cook cutlets in a skillet over a moderately high heat again for 2-3 minutes turning regularly.
Serve with buttered new potatoes and petit pois, garnish with parsley if you have some.

When you slice up lemon for drinks, slice leftovers and freeze in an ice tray. You can also freeze cranberries or chopped fruit into ice cubes to add a splash of dash to your cocktails!

Q: What is a bain-marie?

A: A bain-marie is basically a cooking vessel half filled with hot water in which you place the dish to be cooked. It's ideal for melting chocolate at a low temperature or keeping sauces warm. Its perfect for making a baked custard or anything that needs long, low temperature cooking to prevent burning.
