With the children going back to school we sometimes need quick and easy meal solutions for when they come in starving after a hard day!

Having some time-saving recipes handy can stop them reaching for sweets and crisps whilst they wait for their meal.

A good after-school snack can be as simple as a small bowl of smooth peanut butter with either breadsticks or carrot fingers- cheaper if prepared by you rather than the ready bought and less nutritious varieties.
Try some of our really easy after school recipes-

                  
 

Chicken Dipper Club Sandwich


You Will Need...


You will need (per child)

4 chicken dippers
2 slices wholemeal bread
2 slices bacon
Shredded lettuce
1 small sliced tomato
1 tbsp mayonnaise

Instructions

• Cook the chicken dippers as per pack instructions (usually 10-15 mins)
• Toast the bread
• Grill the bacon until crisp
• Mix the mayonnaise with the shredded lettuce
• Layer up the sandwich and cut into 2 triangles

** You can hold the triangles together using cocktail sticks (but make sure you remove them before giving them to really little ones) **

    
 

                  
 

Pea and Ham Pasta Bows


You Will Need...


You will need (serves 4)

Pasta bows (approx 400g/14oz)
Frozen peas (150g/5oz)
1 bunch of spring onions, sliced
Garlic and herb light cream cheese (200g/7oz)
Wafer thin ham, shredded (150g/5oz)

Instructions

• Start by cooking the pasta in boiling water as per the pack instructions
• Add the peas to the pasta for the last 3 minutes of cooking time
• While you are doing that gently fry the spring onions in 1 tbsp of olive oil for 1 minute
• Then stir in the garlic and herb cream cheese with the spring onions, adding 4-6 tbsp of the water from the pasta to thin down the sauce
• Mix in the ham and heat through
• Then toss together with the drained pasta and peas

Serve immediately and enjoy!

    
 

 
Cooks Tip –

When cooking with spices, always use plastic utensils rather than wooden ones, which will discolour really easily and can pick up and retain flavours even after washing.
