Winter is a great time
to stock up your freezers. Nothing is more satisfying
on a cold, rainy day than cooking and baking on a large
scale and filling the freezer with goodies for a later
date. But always make sure you know what's in your freezer
by adequate labelling. Every package should be clearly
labelled before freezing, so it can be quickly located
and identified when required. The method of labelling
will depend on the packaging material used, but every
label should show the following information:-
kind of food and variety
quantity of number of portions
date of freezing
any special instructions relating to thawing, heating
or seasoning

Wax
or chinagraph pencils or waterproof felt pens write best directly
onto almost anything, and their wide range of colours help to
code packages. Ordinary writing inks are not waterproof, and
pencil quickly fades. Self-adhesive labels suitable for freezing
are also available. Use different coloured labels for the different
types of good, eg red for meat, green for vegetables, blue for
fish etc, to provide a quick method of identification.
For film or polythene bags the label can be slipped inside just
before sealing or fixed to the ouside of the package with a
strip of transparent tape.

You
will need:
4 tablespoons (60ml) olive oil
2 medium onions, peeled and sliced
1 garlic glove, crushed
2 green peppers, cored, seeded and sliced
2 medium aubergines, sliced
8oz (225g) tomatoes, skinned, seeded and
chopped
1 x 14oz (1 x 396g) can tomatoes, drained
salt and freshly ground black pepper
1 teaspoon (5ml) parsley, chopped
1/2 teaspoon (2.5ml) dried basil
4 tablespoons (60ml) dry white wine
Instructions

Heat the olive oil in a saucepan and add
the onion and garlic
Cook gently until the onion is transparent
Add the peppers and aubergines and fry for
3 minutes, stirring occasionally
Add the courgettes, tomatoes, seasoning,
herbs and wine
Cover the pan and simmer for 45 minutes or
until the vegetables are tender, stirring occasionally
Taste and adjust the seasoning. |

MOVING
HOUSE
The New Year very often means a new home for some people.
For those who couldn't 'be in by Christmas' January to March
is traditionally a busy few months for house moving, so don't
leave your plans for your freezer till the last minute. When
moving house check with the removal firm that the freezer
can be moved still fully loaded. |
If
the moves takes place within a day, then the food will remain
frozen providing the door is not opened. Arrange for the freezer
to be the last item in the van and the first off. Make provisions
for power to be on a the mains, and there is someone to switch
on the freezer when is arrives, and the plug will fit the
new socket.
If a move takes lonver than a day, then plans should be made
to run down or dispose of the food supply. |
