At a time when money is tight and food prices seem to be rocketing it’s important for us to get the best value for our money when it comes to our supermarket shopping. Best value doesn’t necessarily mean buying the cheapest – often the cheapest prices mean lesser quality and more waste.

A smaller portion of quality food provides better nutritional value than a larger portion of cheap but just-about-edible offerings. If you really need to cut your food bills down then investigate thoroughly what you are really spending your money on. But one get one free may seem a good deal but only if you will really use the food as part of a meal and not as an ‘extra’.

Remember it is always more cost effective to prepare fresh food than it is to buy ‘convenience’ foods and almost always nutritionally better.

If shortness of time is your main consideration then consider doing a ‘cookery freezer’ day when you have enough time to prepare as many dishes as you can and freeze for a later date.

There are also many recipe books on the market for short-of-time cooks. If you internet shop, spend a little time checking out the offers or cheaper alternatives to see if they are cost effective – Tesco website has many useful hints, tips and recipes all with saving money in mind, they also have a meals for under a fiver booklet which is really useful for providing for a family.



                  
 

Tomato, Olive and Onion Salad

(Serves 8 People)
Ingredients

8 large tomatoes, sliced
1 large onion, thinly sliced
50g pot of olives
3 tbsps Virgin Olive Oil
1 tbsp white wine vinegar
4 radishes, thinly sliced
1 tspn mustard


Instructions

• Layer the tomatoes into a flat shallow dish

• Layer the onion over the tomatoes then layer the radish on top

• Scatter the olives onto the layers

• Whisk together the oil, white wine vinegar and mustard, season with pepper and drizzle over salad

• Serve immediately with French bread to mop up juices.


    
 

                  

 
Quick Dish

Asparagus is a lovely dish at any time of year but for a light spring lunch it couldn’t be better or easier. After trimming the asparagus ends boil or steam until just tender.

Whilst still hot wrap two slices of wafer thin ham around three spears per person. Lie on a plate and sprinkle generously with a grated cheese or your choice. Serve with crusty bread or rolls for a light yet tasty lunch.

                  
 
Quick Dish

For a truly tasty snack, break some mushrooms into a small pan with a lump of butter and heat until light brown.

Put onto a baking tray and squirt a little garlic paste onto each piece and grill until paste has melted. Serve on a slice of chunky toast and sprinkle the whole thing with Red Leicester cheese, grated.
