Tomato, Olive and Onion Salad
(Serves 8 People)
Ingredients
8 large tomatoes, sliced
1 large onion, thinly sliced
50g pot of olives
3 tbsps Virgin Olive Oil
1 tbsp white wine vinegar
4 radishes, thinly sliced
1 tspn mustard
Instructions
• Layer the tomatoes into a flat shallow dish
• Layer the onion over the tomatoes then layer
the radish on top
• Scatter the olives onto the layers
• Whisk together the oil, white wine vinegar
and mustard, season with pepper and drizzle
over salad
• Serve immediately with French bread to mop
up juices.
