Blueberry
& Walnut Muffins
|
You
will need:
Cals: 256 each
10oz/275g plain flour
1 tbspn baking powder
3oz/75g caster sugar
8 fl oz/225 ml milk
31/2 oz/100g butter
2 eggs, lightly beaten
5 oz/150g blueberries
31/2 oz/100g chopped walnuts
Few drops vanilla extract (optional)
Instructions

Line a 12 cake muffin tin with muffin papers and
pre heat oven to 190ºC
Mix dry ingredients together in a bowl.
Mix together butter, eggs, milk and vanilla
then mix gently into dry ingredients bowl
Stir in blueberries and then spoon mixture
into papers
Cook for around 20 mins till golden brown.
Cool on wire try and serve |

Sorbet -
sorbets are simply flavoured iced water so are remarkably
low in calories, most restaurants serve around 40g portions,
and that a mere 40 calories.
Rice pudding
- a can of rice pudding is surprisingly low on calories
and can be topped up with strawberries or blueberries
etc. to add interest. You will be eating around 160
calories per helping.
Fruit salad
- freshly made, a fruit salad is around 130 calories,
but do not forget, tinned versions will have added sugars
or syrups - boosting the calories up considerably.
Chocolate Mousse
- an individual frozen chocolate mousse will only tot
up around 100 calories but beware of adding cream, as
this could double the amount. |
