Fanned Potatoes with Garlic
Serves 8
Ingredients:
16 small potatoes (scrubbed)
2 tbspn chopped Rosemary
3 cloves garlic, crushed
21/2 tbspn olive oil
Sea salt and black pepper to season
Instructions:
Pre heat oven to 200o (Gas 6)
Cut slashes into each potato as if making
a fan, making sure not to cut all the way through,
at around ¼" intervals. Put into baking dish.
Mix garlic, rosemary and oil together
and spoon a little over each potato getting
into each cut section, or use pastry brush if
easier.
Season with a little sea salt and black
pepper then cover top in cooking foil.
Cook in top of oven for around 11/4 hours
until tender.
Serve hot in pre-warmed serving dish.
