For those of you who love the distinctive taste of Morocco treat yourself to the wonderful recipe book called ‘Tagine’ by Ghillie Basan.

These authentic tasting recipes are fragrant stews packed full of exotic ingredients – chestnuts, saffron, olives, turmeric, paprika and all the wonderful ingredients redolent of
those Moroccan holidays.
Or if Italy is your favourite destination invest in ‘Recipes from and Italian Terrace’ by Valenta Harris – packed with gorgeous illustrations of the delicious world of Italian foods.

                  
 

Tiramisu

Serves 6

Ingredients
200g Biscotti (miniature biscuits)
120ml strong black coffee
4 tbsp Tia Maria
250g Mascarpone cheese
9oz Thick Cream
25oz Grated dark chocolate

Instructions

• Place the biscotti in a flat dish to cover the bottom without overlapping.

• Add the Tia Maria to the coffee and pour over the biscotti – leave to stand for 5 minutes.

• Beat the cream and mascarpone together

• Arrange the biscotti mixture into a trifle bowl gently pressing down to an even layer with a fork.

• Add ˝ the cream mixture to form a layer.

• Add the remaining biscotti pouring over remaining coffee mixture.

• Add the final layer of cream mixture and sprinkle with chocolate shavings.

• Chill for at least half an hour then serve.
