Starting a new healthy eating plan?

Most of us put on a few pounds over the holidays and why not? With all the delicious things around at Christmas it would be really miserable to have to say no to them all.

So if you’ve indulged yourself for the last few weeks you may be wanting to cut back a bit now. Remember to include plenty of fruit and vegetables at this time of year – your vitamin
supply may be low just now and there’s nothing better for kick-starting your metabolism and helping to de-tox. At this time of year it helps to have fruit and vet hot – not many of us can face a cold carrot or boring apple on these dark, cold days but stewed fruit with just a little custard or crème fraiche still feels like a winter Pudding.

Try to make your vegetables the biggest portion of your meal, a small piece of meat with three or four different vegetables is healthier yet still very filling – more economical too. Most of us stopped salting our vegetables a while ago, but if you haven’t please make an effort this year to seriously cut down on salt intake. Your may feel that you want to add a supplement to your diet this year – choose very carefully, gather as much information as you can beforehand and decide what it is you would Really benefit from.
                  
 

Cauliflower Cheese Soup

You will need:

Calories per serving: 340

• 1 small cauliflower
• 1 small onion
• ¼ pint (150ml) skimmed milk
• 1 tbspn corn flour
• 2 oz (60g) mature cheddar (grated)

Instructions

• Cook the cauliflower and onion roughly chopped in boiling water for 15-20 mins until tender.

• Drain and keep ¼ pint of the water used for boiling.

• Puree the cauliflower & onion with the reserved water in a liquidiser until smooth then return to the saucepan.

• Blend the milk and corn flour until smooth then stir into the soup mixture. Bring to the boil stirring constantly then reduce the heat to very low for a further 10 mins. Season with a little salt and pepper if required.

• Stir in the cheese for 1 minute.

• Serve immediately, perhaps with extra grated cheese on top and chopped chives or herbs and crusty bread.

    
 

                  
If you plan to eat healthier this year then you really can’t do better than to start the day with a good breakfast. Many people skip breakfast then snack all morning until lunch and it really is a mistake. A biscuit or packet of crisps mid-morning is not a substitute for a real breakfast and many studies have shown an increase in performance by children and adults who do eat a proper breakfast.

If you can only face toast in the morning then try to choose a healthy bread of the variety packed with seed and nuts. This will keep you going better than a starchy white bread. For a real healthy alternative try porridge with a few raisins and chopped
dried apricots, very easy to do in minutes in the microwave and no difficult pans to scrub. Crumpets with a slice of Edam and slice of tomato on top are a good way to start the day. And don’t forget to drink! A staggering number of people leave for work without even a cup of tea or glass of orange and apparently men are particularly guilty of this.

Always, always start your day with a drink of some variety, hot or cold, to hydrate the body after the night hours and get the kidneys functioning. If you must drink coffee first think in the morning then do try to choose a decaf variety. A blast of caffeine first thing can give you a false rush of energy which will leave you feeling low mid-morning, so save your caffeine until later in the day, certainly until you have eaten.
